One reason that I love living & working downtown is how close I am to stuff.

I realized I needed a break at work (I had eaten lunch at my desk and couldn’t remember when I stopped last).

So . . . I put on my workout clothes & headed off to the Walnut St. Bridge. (Shh, I’m still there)

I get a nice exercise (and mental) break in the nice & pretty. Just the afternoon pick me up I needed!!

Love MY city!!

What I’m giving up for Lent

Today is the first day of the Lenten season. While I may not do my religion like others do, I still do some things every one does.

Like Lent.

While Lent is meant to bring you closer to God thru sacrifice, I use as a reset. We are far enough away from New Year Resolutions to have slipped. So, this is a good time of year (close to spring) to clear things out and start over. And that helps me strive to be a better person, which I know makes God happy.

I’ve given up lots of things in past years — Taco Bell, buying food in the cafeteria at work, cussing, meat. I’ve also taken up things – exercising, being positive, writing every day on this blog. All of them made an impression, but few of them stuck long term.

This year? No eating after 9 pm. Let’s see how this goes.

How can a day that starts out with this be bad?

We all complain about Mondays. It is human nature (at least all the humans I know). I’ve been thinking lately, though. Most of the time I dread or complain about something it turns out bad. Is that because I *knew* it would be horrible or did my attitude make it happen?

So, I’ve decided to try something new. I’m gonna attempt to be positive. Well, maybe let’s start with just not so negative. Let’s see what happens. It can’t be worse, right?

What is one thing that you do without thinking that you can flip?

Dinner!

So, I decided to cook some chicken in the crockpot today.

To the chicken I added soy sauce, brown sugar, hot sauce, garlic and garlic chili paste. That’s it. Plus, some mushroom rice.

Wow! Super tasty. It was fast and is basically healthy. Win!!

My biggest vain trait

Everyone is vain.

Shut up, you have something, I know. That one thing you will not accept in yourself.

This is the trait that drives us to exercise. Or eat right. Or turn off the TV. Whatever.

For moi?

It is my gray hair.

Not gonna happen. Not while I have the ability to fix it. For years (no, literally for like 11 years) I colored it myself. L’Oreal, please. It is what my mom did and it was cheap.

(And it looked brassy & cheap, but I didn’t know any better).

My lovely hairdresser (Lauren Hollingsworth owner of Salon 30A) begged me to let her do the color professionally. I finally gave in.
THANK YOU BABY JESUS!!!

We found an awesome blonde (that Lauren Arnold still uses on me) and people don’t even realize I am a natural brunette.

So, there is my dirty little secret. I color my hair. I budget so I have the extra cash to pay for it — it is that important.

What is your dirty little vain secret? Tell us, you’ll feel better! Let that flag fly, sweetie!!

That might be putting it mildly. But thunderstorms mornings? Come on, man!

Part of what it so difficult to get moving is Oreo. He wants to snuggle and I want to oblige.

Zucchini Fries

So, last week I made zucchini fries and posted a picture on Facebook – because that’s what you do, right? Cook food and post pics of it. Then no one really comments on it. Except this time — holy crap, I had like 5 people tell me how good they looked and they wanted the recipe. Which for me was awesome! Don’t judge me for being excited about such small numbers – there are plenty of other things on which you can judge me).

Since I just want to please people . . . . . here is the recipe.

(OH yeah, I didn’t list amounts because I didn’t measure anything. Just make sure you have enough to coat all your zucchini)

Zucchini Fries

Ingredients:

Zucchini (squash works good too)
Panko bread crumbs
Egg substitute
Dijon Mustard
Louisiana Hot Sauce
Spices: Lime Pepper, Indian Hot Peppers, Dry Mustard, Garlic Powder, Cayenne Pepper, Salt, Pepper

What to do:

Preheat the oven to 450 degrees’.
Cut the zucchini into stripes
Pour the egg substitute & Dijon mustard into a bowl and whisk together. I put some hot sauce in there because everything is better with hot sauce. It just is.
Put the Panko bread crumbs on a plate and pour the spices into it. Mix them together with your fingertips (they are still clean, enjoy that!) OH! Don’t feel that you have to use the spices I used – I’m a little strange. Use what you like. Most recipes call for Italian Seasonings. I don’t keep that in my house, but if you do – go ahead and use it. But use what spices you like. You’re going to eat it – not me.
Here’s the fun part. Take the zucchini and dip it into the egg mixture, then the panko mixture. Use one hand for the egg mixture and the other hand for the panko. That will make you easier to clean up. Of course, I don’t do that, so I have to degunk often.
Place them on a cookie sheet – just one layer
Spray with butter (or cooking spray or olive oil or whatever fat you like)
Cook for 10-15 minutes – they should be golden and crunchy, yet soft.
Sprinkle them with salt (I used a truffle salt because I’m fancy). I also sprayed them with Ranch dressing. That was inspired on my part . . . . trust me, if you have it, do it!
